Pancakes, Pancakes! Recipe | Homemade Goodness

Lately, my sweet little two year old has become completely obsessed with the book Pancakes, Pancakes by Eric Carle. On the first read it was the most tedious children’s book I’ve ever read, but on the 100th read and when it puts the world’s largest grin on your toddler’s face it quite grows on you 🙂

Since then, every morning when Jules gets up she asks for a big pancake! And so I set out to make the best homemade pancake possible. After, many utter failures and a few runner ups I’ve perfected Juliette’s Big Pancake!

The recipe if you’d like:

 

Ingredients:

2 cups organic wheat flour

1 tsp baking powder

1 tsp sugar

dash of salt

1 TBS butter (softened)

1 egg

2 cups organic whole milk

Fresh fruit (optional)

Pure maple syrup (optional)

 

Directions:

1. Combine flour, baking powder, sugar and salt in large bowl.  Mix well.

2. Add half of the butter and the egg to the flour mixture. Mixture will be clumpy and crumbly.

3. Pour milk into flour mixture and whisk for about 2 minutes (if batter is too thick add slightly more milk until it has a nice smooth consistency).  Batter will look slightly clumpy, but mostly smooth.

4. Heat pan on high, add a little bit of the remaining butter, pour batter into pan let cook til golden brown then flip, brown and serve with your favorite pancake toppings!

5. Enjoy!

 

I topped our pancakes with fresh bananas and pure maple syrup and served with a chilled glass of mango juice, delish!
