In case you weren’t aware my oldest daughter Jules (who is quite possibly the most precocious 3 year old you will ever meet) loves, and I mean LOVES baking. Every single game she plays is about cooking or baking. I give her alphabet shapes and if I ask her what letter one is the response I get is, “This is a cookie mom, but it’s shaped like the letter J.”
If I happen to utter the “b” (b as in bake) word she immediately runs to the kitchen grabs and puts on her apron and brings Lorelai and me our aprons and enthusiastically exlcaims, “I’m ready to bake now mom, what are we going to make today?”
So today, since we missed our weekly swimming class on account of Lorelai having a terrible case of croup and she was going completely stir crazy I asked her if she wanted to bake while Lorelai napped.
Silly question on my part but her response was even better than usual, “Oh please, oh please, yes, yes, yes I’d love to bake. I’m going to bake my own special recipe with chocolate chips of course. Mommy can you get me some flour and sugar and butter. Oh and some banilla and peanut butter and salt and an egg and the soda stuff (baking soda- we don’t keep soda in our house) from the fridge?”
I’m pretty sure I just stood there bewildered for a moment while she put her apron on and brought an apron over to me because she then asked me if I was ready and if I could get all the ingredients now and turn on the oven.
I of course guided her with roughly how much of each ingredient went into the recipe, but the technique, how much vanilla, peanut butter and chocolate chips were totally and completely determined by her.
And yes, these cookies are as good as the sound and I could literally eat all of them. In one sitting. Without even realizing it. And then gain twenty pounds if I let her bake more than once a week.
Peanut Butter Jewel Cookies
2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 stick of butter melted completely
1/2 cup brown sugar
1/2 cup white sugar
1 tablespoon pure vanilla extract
2 tablespoons creamy peanut butter
1/4 cup chocolate chips
Preheat oven to 350.
In a large bowl whisk together melted butter, sugar, egg, vanilla and peanut butter.
In a separate bowl combine flour, baking soda and salt.
Pour flour mixture into bowl with butter sugar mixture and stir with a spoon until well combined. Fold in chocolate chips (or chocolate jewels as my Jules calls them). Roll dough into small 1″ balls and place on baking sheet (I recommend stoneware or a parchment lined baking sheet).
Bake for 15-18 minutes (if not using stoneware I’d check the cookies at 12 minutes).
