Old Fashioned Cherry Pie | Homemade Goodness

Here’s another recipe for you straight from my kitchen to yours.  It’s an old fashioned cherry pie, low on added sugar and high on deliciousness.

 

Ingredients

2 lbs fresh picked cherries

1 tablespoon granulated sugar

3 1/2 cups unbleached organic pastry flour (you can use all purpose flour)

2 teaspoons salt

1 cup amish butter melted (you can use salted butter)

1/2 cup ice water (like straight from the fridge super cold water)

1 egg beaten

 

Directions:

  1. Wash and pit the 2 lbs of cherries.  Place in a glass bowl and toss with 1/2 tablespoon of granulated sugar. Cover and refrigerate overnight.
  2. Preheat oven to 425.
  3. Combine 1 teaspoon salt and 2 1/2 cups organic pastry flour with 1 cup of melted amish butter. Mix with a fork until flour is crumbly and has absorbed all the butter.
  4. Clean a large flat work surface and generously flour with about 1/2 cup flour.  Reserve the remaining half cup to flour your rolling pin and crust as you roll it out to prevent sticking.
  5. Add 1/2 cup of ice water to the flour and butter mixture.  Stir until just combine.  Do not overwork adding the water in.  The dough should clump together into a ball and only be slightly sticky.
  6. Place dough ball on floured work surface and roll into a large sheet of dough about 1/4 inch thick.  Place your pie dish in the center face down and using a knife cut a circle in the dough around your pie dish about 1 inch from the edges of the pie dish.
  7. Place this circle of dough in your pie dish.  The dough should hang over the edges about 1/4 of an inch.
  8. Remove cherry mixture from refrigerator and strain cherries.  Once strained pour the cherries into the crust.
  9. Roll the remaining dough out again and cut into long strips to lace as a lattice over the top of the pie.  You can weave these strips or criss cross them, both make the pie look delicious. Once the lattice is played pinch and flute the edges around the pie. Using a pastry brush, brush the top of the crust with 1 beaten egg.
  10. Place pie into oven and bake for 20-25 minutes.  As soon as you remove the pie from the oven sprinkle 1/2 tablespoon of granulated sugar over the top of the pie.  Let cool and enjoy.
